Ok... I have no idea what happened. Must have lost or fallen asleep longs longs ago.

I last did pottery probably during velious/luclin era. I finally looked at my skills list and notice 248! Maybe I got dumber from un-use. =P

So.. I've been so outta tradeskills. What's the easiest way to get these last 2 points. =)

There are a lot of factors you didn't tell us: What gems can you imbue? Do you have more plat then time? Are you even slightly interested in reselling what you make? Once you decide the answers to those, I reccomend surfing here, scrolling down to the 250+ trivials, and figuring out which would be easiest for you.

I wouldn't worry too much about it. Assuming you have a +5% geerlok, you're already maxxed in skill.

I think the easiest thing to make is Star Ruby Encrusted Stein. These still sell for a profit on my server and are dead easy to make.
