If you get the trophy for skill that you have capped at 200 (another skill over 200 and haven't bought the AAs), can you eventually evolved the trophy to level 7? or is trophy capped at your current level?

The trophy is capped at your skill 'level' + 1.
For a skill that you have capped at 200. You could do the quest for the Journeyman trophy, then raise the trophy to Expert (5/7, 250 skill).
You could not raise the trophy to Master or the named (7/7) level until you spend 3 AA to buy New Tanaan Craft Mastery and raise your skill to 250 or 300 respectively.
