If at a skill level of 100 you are considered a Master, and at 200 Grandmaster, what are you considered at 300?

You're confused... and admittedly the game is confusing in this regard as well.
First, 100 is master only on your skills window. Actual floating above your head titles are 100 apprentice, 200 journeyman, 250 expert, and 300 master.
The word grandmaster does not appear anywhere in relation to players, only as the name of items (DoN cultural armor and tradeskill trophies). Its use as a title was entirely player invented and generally used to mean 250. That was before floating above your head titles existed, before the caps rose to 300, and everyone at 100 was entitled to call themselves master, so players created grandmaster for some distinction.
It's use as a player title is now is somewhat anachronistic and can also be misleading as its not properly defined anywhere.

The Skills window lists the following tradeskill titles and these levels of skill:

However, the titles that are available to append to your name so that they appear over your head are:
Apprentice - 100
Journeyman - 200
Expert - 250
Master - 300

I'll have to double check that. I really don't pay much attention to the skill window anymore (unless I'm checking my skill; although I usually do that when making an item using the new interface, which has the skill at the top.)Originally posted by TwistagainI'm pretty sure the skills window matches the titles now. Expert and Apprentice do not appear in the skills window normally. There are a whole slew of titles in the skill window ranging from "very bad", "bad", "good", "average", "below average", etc. It's been so long since I had any skills that low that I've quite forgotten the ranges, but theres half a dozen or more before "master".
Also an anomaly I do remember, you in fact need 101 to be master EXCEPT some time in ages long past they altered languages to give the master designation at only 100.
Also, the real floating above your head titles (highest one you are entitled to) replaced the old style titles for tradeskills only (and fishing) in the skill window. I don't honestly know if the old skill window style titles still appear for tradeskills under 100... I was long past then when they changed it. I suspect they do though.

By all means though, feel free to quote me, although we are missing data. Maybe someone else can help out here?

I just checked and you are largely correct. It does give the tradeskill titles for each of the tradeskills now. My rogue's skills window, for example, lists him as an apprentice baker, apprentice blacksmith, apprentice brewer, apprentice potter and a master poison maker. I believe that this is expansion-specific, however. My skill window still lists "Master" for everything above 100, including tradeskills. I do not have the expansion that introduced Floating Over Your Head Titles (OoW or GoD? I always get them confused.) Also, the last two skill designations are Feeble and Awful.It does give the tradeskill titles for each of the tradeskills now.

It seems to me that having the tradeskill titles uniformly represented within the Skills windows regardless of which expansions one has is something which ought to be implemented if it hasn't been. The original use of tradeskill titles was in the Skills window. Alas, this is even a trifle confusing as what you see there will depend on whether you have the Omens of War expansion. If you do have it, this is what you should see:
Master 300
Expert 299-250
Journeyman 249-200
Apprentice 199-100
Excellent 99-91
Very Good 90-81
Good 80-71
Above Average 70-61
Average 60-51
Below Average 50-41
Bad 40-31
Very Bad 30-21
Feeble 20-11
Awful 10-0
If you do not have the Omens of War expansion, the list will be the same until skill 100, which will still be Excellent, and will then be Master for 101+. (The exceptions to this are language skills, which become Master at 100.)
If you do have Omens of War, you will then have the option of adding a tradeskill title to your name when you reach Apprentice level in any tradeskill. These titles are displayed over your head with your name and guild. Only Apprentice, Journeyman, Expert, and Master titles are available for display, as you reach the appropriate levels of skill. Using the Titles window, you can see the titles available to you and choose whichever one you want to display. So a fletcher with 300 skill can use the title Master Fletcher, while an alchemist with 208 skill can use the title Journeyman Alchemist. Furthermore, if all seven of your tradeskills (excluding those that are race or class restricted) get to Apprentice level or better, you will have the option to be titled as whatever level of Artisan. So having all of your skills at 100 or better makes you an Apprentice Artisan, 200 or better makes you a Journeyman Artisan, etc.
So what about Grandmaster??
