I'm just wondering how much of a boost I would receive from doing Planar Power 5 and getting +25 inc on my combines. Would I notice a sizable amount of skillups, enough to be worth it, or should I push on with defensives and such?

Planar Power increases the cap for each stat by 5 per rank. So you will benefit outside of tradeskilling as well. You'll get 5 more STR, STA etc (if that makes it any more interesting.) If you have it available, Innate Enlightenment would actually be better (for tradeskilling), because it increases your INT/WIS cap by 10 per rank and only costs 1 more AA (per rank.) I think this is only available to the various casters though (INT casters, and Priests.)
