anyone know why you cannot dye your outfit black or white?

The dyes don't actually dye your armor, they just tint it. It's like adding a coat of semi-transparent paint on top of the armor, which sort of but not really masks the underlying color. Because of the way tinting works, a pure white tint is equivalent to no tint at all -- in fact, to remove an armor dye, you set the color in that slot to pure white. True black has the opposite problem; it would obscure all the detail on the armor.
The solution is to dye your armor almost-black or almost-white, say about 10 points away from the extremes on the color slider bars. So black would be like 10, 10, 10, and white would be 245, 245, 245. Adjust as necessary to make your armor look good.Sir KyrosKrane Sylvanblade

As Kryos has stated there is no true color for armors. you apply the color over the base color of an armor making it hard to get black and almost impossible to get white. However setting the sliders to anything less the 25 in all 3 colors will default it to 25,25,25 the only way I have found to alleviate that is to set one slider on 25 and set the others to less. Depending on the base color of the items being dyed should dictate which of the 3 colors you set to 25.
P.S White leather would look great but there is no known combo to make it.

actually you can dye some things pure white.. if the color isnt a base of white in the beginning it allowed me to dye it white on a few things (a robe and some others..) white robes do look pretty cool hehe
just adding that in..it IS possible to do pure white on some things..Ddemons Ddemise
