Well, I finally had the chance to try the new UI on a toon *other* than my GM baker bazaar mule girl. I've been slowly playing this adorable little halfling druid of no skills and had an excess of tradeskill supplies that I needed to sell or otherwise get rid of. On a whim I took her back in to Rivervale to try some tailoring and baking.
I discovered that the UI *IS* significantly faster if you're not in the middle of a big lagfest zone. My baking toon has never done her combines anywhere other than in the Bazaar. Ever. It appears that I've gotten quite good at dealing with the lag that happens there when I go through large runs of things like HMPs and MTPs. But when my little druid baby went through combines that were the equivalent of pies and picnics there was a noticeable difference in the speed of the combines. Subcombines are still faster in my opinion done the "old fashioned" way. But the bigger combines in a non-lagged zone (ie, not the Bazaar) were definitely quicker with the new UI.
So, too easy? Perhaps if you're not in a lagged zone and I suspect that every new yahoo trying out these pies and picnics doesn't combine them in the Bazaar like I do.
